Hello Everyone-

I am announcing the start of my blog. You can look for new posts on Wednesdays. The first Wednesday of every month will be a recipe that is particularly nourishing for the season. The 2nd and 4th Wednesdays of the month will feature poetry or quotations that inspire and heal. All other Wednesdays will be a potpourri of topics related to wellness.

To start off, I present a recipe to give you a boost of energy by nourishing the kidneys and liver.

GOJI BERRY VINAIGRETTE

1/2 Cup Cider Vinegar
1/4 Cup Olive Oil
1/4 Cup Goji Berries
1/8 Teaspoon Kosher Salt
2 Teaspoons White Sugar

DIRECTIONS

In a saucepan combine vinegar and Goji Berries. Cook over medium heat until Goji berries soften. Remove from heat; add olive oil, sugar, salt and pepper. Place in blender and mix until smooth. Refrigerate until chilled. Toss with your favorite salad. Because it is cold outside, I recommend a wilted salad using spinach and walnuts and some of your favorite apples, berries or pears.

Goji berries have been used in China for thousands of years. Goji berries enhance immune system function, improve eyesight, protect the liver, improve circulation and enrich yin, among other effects. You can find them at Whole Foods and asian food markets such as H-Mart.
